I remember grilling … I remember grilling peppers sometimes, but it’s not convenient nor is it healthy (the peppers get burnt and that’s toxic)… when you grill peppers all the house smells like grilled peppers all day, whereas this recipe is more commonly used nowadays…

You really have a … You really have a skill with peeling the tomatoes, don’t you ever blanch them though for a few seconds? I find it easier, just to make a cross in the bottom with the knife then put the tomatoes in hot water for a few seconds then in cold water and the skin peels off easily
